The labneh production process needs to raise the proportion of dry materials rate within the milk from 10 to 24 at a minimum in order to obtain the consistency of the labneh. In order to raise this percentage, we need to add powdered milk. For that’s we need powder milk blender at this phase. Number 2 shows powder milk blender machine.
We will use two double-jacket tanks to heat the milk , number 3 and 4 shows cooking tanks , then the process of homogenizing the milk will take place at a temperature of 65 degrees .
In order to reduce the temperature to the required degree, we will use a heat exchanger that will be installed after the boiling tanks and before the homogenizer . heat exchanger lowers the temperature of the milk for right homogenisation process and fermentation process.
After the initial homogenization process, powdered milk is added . All other ingredients are mixed with the milk in the boiling tanks. Then the homogenization process is repeated at a temperature of 65 degrees Celsius.
The milk is transferred to the fermentation tank as 45 degree, which is the final stage in the manufacturing process.
Fermentation materials are added to the milk, and the product remains in the tank for a period of time until the fermentation process is completed, the Labne will be thick in Labneh Process Tank. Scraper mixers exist in Labneh Process Tank. then we need lobe pumps after the fermentation process. Lobe pump send final product to filling machine.
